Among Sardinia's features, the diverse array of fruits stands out, discovered as one ventures from the coast to the inland: some are wild, like porcini mushrooms and wild cardoons, while others are the result of centuries-old cultivation such as artichokes and olives. From the combination of these earthy products arises an appetizer that, like no other, expresses the Mediterranean quality of the island and brings the notion of rugged, ancient nature to the table.
Ingredients: Artichokes, wild cardoons, Boletus Edulis mushrooms (and related groups) from the community, Sardinian olives, organic sunflower oil (30% of total ingredients), 100% Italian extra virgin olive oil, fresh lemon, salt, vinegar.
