Rocca Rubia, Carignano del Sulcis D.O.C Riserva

This exquisite Carignano del Sulcis Riserva is a single-variety wine, cultivated along the lower Sulcis coast using an ancient trellising method. The grapes are carefully destemmed and crushed, with the must fermenting in stainless steel tanks at a controlled temperature of 25-28°C. During the 12-14 day fermentation, the must is frequently pumped over to develop the noble tannins for which the bush-trained Carignano is renowned. After malolactic fermentation, the wine is transferred to small French oak barrels for 10-12 months, allowing it to develop its characteristic biochemical, chemical-physical, and organoleptic properties. This wine pairs exceptionally well with hearty meats, wild boar, suckling pig, and mature Sardinian sheep cheese. A serving temperature of 18°C is recommended, and it's best enjoyed in large bowls with a medium-sized opening. With a cellar potential of approximately 10 years, this wine is a true treasure for enthusiasts.
